In a saucepan combine the granulated sugar, vanilla and 1 1/2
cups water. Bring the mixture to a boil and simmer the syrup,
covered, for 5 minutes. Add the pineapple and simmer it,
stirring occasionally, for 6 minutes. Cut the banana crosswise
into 1/2 inch slices, add it to the syrup, and simmer the mixture for
1 minute or until the banana is just tender.
Transfer the fruit with a slotted spoon to a metal bowl set in a
bowl of ice and cold water. Stir it carefully until it is cool and
divide it between 2 serving dishes. Bring the syrup to a boil and
boil it until it is reduced to about 1/2 cup. Transfer the syrup to the
metal bowl set in the bowl of ice and cold water.
Stir it until it is cool. Pour the desired amount over the fruit.
In a bowl with an electric mixer beat the cream until it holds
stiff peaks. Spoon the cream over the pineapple and banana
and serve the desserts immediately.
