RECIPE OF THE WEEK #427

Applesauce

 

16 to 18 tart, unpeeled apples
1 cup water
1/2 cup sugar
2 tablespoons butter
Lemon rind (optional)
Lemon Juice
Nutmeg and cinnamon (optional)

 

Quarter apples, remove core and cut each piece again. Place apple
and water in large pot and bring to boil, stirring to prevent scorching.

Reduce heat and cook until apples are soft, 10-15 minutes, stirring occasionally.

If applesauce seems too thick, add more water, if too thin, cook longer to thicken.

Put through food mill or sieve and add butter. Add sugar gradually, tasting for desired sweetness. Add grated lemon juice, nutmeg and/or cinnamon if desired.

Yields approx. 2 quarts.
