16 to 18 tart, unpeeled apples |

Quarter apples, remove core and cut each piece again. Place apple Reduce heat and cook until apples are soft, 10-15 minutes, stirring occasionally. If applesauce seems too thick, add more water, if too thin, cook longer to thicken. Put through food mill or sieve and add butter. Add sugar gradually, tasting for desired sweetness. Add grated lemon juice, nutmeg and/or cinnamon if desired. Yields approx. 2 quarts. |
