Fall Fruit Mold with Ginger Dressing

 

1 (3-ounce) package apricot-flavored gelatin
2 cups boiling water
1/3 cup coarsely chopped dates
2 medium unpeeled pears, cored and diced (about 1 cup)
1/3 cup chopped walnuts
Lettuce leaves (optional)
Ginger Dressing

 

Dissolve gelatin in boiling water stir in dates. Chill until consistency of unbeaten egg white.

Fold in dates, pears, apples and walnuts. Pour into a lightly oiled 4-cup mold cover and chill until firm. Unmold on lettuce leaves, if desired serve with Ginger Dressing.

Yield: 6 servings.

Ginger Dressing

1/3 cup mayonnaise
1/3 cup commercial sour cream
2 tablespoons minced crystallized ginger.

Yield: 2/3 cup.
