Baked Apples
and Red Cabbage

 

4 slices bacon, chopped
2 cups thinly sliced onion
10 cups red cabbage
(2 1/2 pounds), cored and coarsely shredded
1/4 cup red-wine vinegar
4 large tart apples
(2 pounds) peeled, cored and sliced thin
1 tablespoon sugar
1 teaspoon salt

 

In a stainless steel or enameled casserole cook bacon over moderately high heat, stirring until golden brown. Add the onion and cook the mixture, stirring for 10 minutes, or until the onion is golden. Stir in the red cabbage and simmer the mixture, covered, for 15 minutes. Add the apples, vinegar, sugar and salt. Combine the mixture well and bake it, covered, in a preheated 325 degree oven for 1 hour and 35 minutes. Serves 6.
