RECIPE OF THE WEEK #445

Harvard Beets

 

1 tablespoon cornstarch
1/3 cup sugar
1/4 cup water
1/4 cup vinegar
1/2 teaspoon salt
2 cups diced, cooked beets
1 tablespoon grated orange rind
2 tablespoons butter, melted

 

Blend the cornstarch and sugar stir in the water, vinegar and
salt. Bring to a boil, stirring constantly. Add the beets and grate
orange rind and simmer for 15 minutes.

When ready to serve, put in the butter and bring to a boil.

Serves 4.

How to Cook Beets

Choose even sized beets and cut off the tops, if necessary. Place beets in a large saucepan of water.
Cover the pan and bring to a boil. Lower the heat and cook gently until tender, about 30-40 minutes.
Add more boiling water as necessary
