Chicken and Broccoli Salad

 

4 whole chicken breasts
2 cups broccoli flowerets
1 medium red onion, diced
3/4 cup chopped fresh dill
Juice of half a lemon
1/2 cup mayonnaise
3/4 cup sour cream
Salt and freshly ground black pepper to taste

 

Poach chicken breasts in simmering water until cooked
but still tender. Let cool. Cook broccoli in boiling, salted water for 4-5 minutes.

Broccoli should be crunchy. Set aside. Mix together onion, dill, lemon juice, mayonnaise, sour cream and salt and pepper. Remove meat from cooled chicken breasts. Cut into bite size pieces. Add broccoli to chicken and toss all together with dressing. Chill salad and serve on bed of lettuce. Makes 8 to 10 servings.
