Layered Cauliflower Salad

 

1 medium head cauliflower
1 medium head iceberg lettuce, torn into bite-size pieces
1 medium purple onion, chopped
1/2 pound bacon, cooked and crumbled
1 cup mayonnaise or salad dressing+
3 tablespoons sugar
1/3 cup grated Parmesan cheese

 

Wash cauliflower cut flowerets into bite-size pieces. Layer lettuce, onion, cauliflower, and bacon in a 3 quart bowl.

Combine mayonnaise and sugar mix well. Spread mayonnaise mixture evenly over top of salad, sealing to edge of bowl. Sprinkle with Parmesan cheese.

Cover salad tightly, and chill at least 8 hours. Toss gently before serving Yield: 8 to 10 servings
