RECIPE OF THE WEEK #464

German Potato Salad

 

7 medium-sized red potatoes (about 2 pounds)
1/2 cup chopped onion
2 chicken-flavored bouillon cubes
1/4 cup boiling water
3 tablespoons red vinegar
1 tablespoon vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper
3 slices bacon, cooked and crumbled

 

Cook potatoes in boiling water, cover 25 minutes or until tender.

Drain, and cool slightly. Peel potatoes, and cut into 1/4-inch slices.

Combine potatoes and onion in a large bowl set aside.

Dissolve bouillon cubes in boiling water stir in vinegar and next 3 ingredients.

Pour over potato mixture, and toss gently. Sprinkle with bacon.

Yield: 8 servings.
