Apple Coffee Cake

FOR THE CAKE:

  • 2 cups Bisquick
  • 2/3 cups milk or water
  • 3 TBS sugar
  • 1 egg
  • 2 cups apples, peeled, cored and sliced thin
  • 2 TBS chopped nuts (optional)

FOR THE TOPPING:

  • 2/3 cup Bisquick
  • 2/3 cup packed brown sugar
  • 1 1/4 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 cup cold butter or margarine

FOR THE GLAZE:

  • 1/2 cup powdered sugar
  • 2 to 3 tsp. milk

Preheat oven to 400 degrees. Spray a 9-inch square pan with cooking spray. In a small bowl, mix 2/3 cup Bisquick, brown sugar, cinnamon and nutmeg. Using a pastry blender or a knife, cut in butter until crumbly; set aside. In a medium bowl, stir together 2 cups Bisquick, 2/3 cup milk, sugar and egg; using a spoon, vigorously beat for 30 seconds. Spread half of the batter in the baking pan. Arrange apple slices on batter; sprinkle with half of the streusel mix. Spread the remaining batter over the streusel mix and sprinkle with nuts (optional). Bake about 25 minutes or until the toothpick inserted in the center comes out clean. Cool in pan on a cooling rack for 30 minutes. In a small bowl, stir glaze ingredients until smooth enough to drizzle; then, drizzle glaze over warm coffee cake. Can be served warm or room temperature.
