Baked Honey-Lime Chicken Wings

  • 4 limes (3 to squeeze and 1 cut into wedges)
  • 1/3 cup honey
  • 1 tsp. garlic crushed with a garlic press
  • 1 tsp. ground coriander
  • 1 tsp. salt
  • ½ tsp. black pepper coarsely ground
  • 30 chicken wings (about 2 ½ lbs.)

Preheat oven to 450 degrees. Before squeezing, zest one lime into a bowl and set aside. In another bowl with fork, mix honey, garlic, coriander, salt, pepper, and lime juice. Toss wings in honey-lime mixture and let sit in the refrigerator for 1 hour. Arrange chicken wings on a cookie sheet that has a small lip on the sides and line with parchment paper. Drizzle lime mixture over chicken. Bake for 30-35 minutes rotating pans between upper and lower racks halfway through baking and occasionally brushing chicken with glaze in pan, until chicken is cooked through. Transfer chicken to serving dish. Drizzle with pan juices. Garnish with lime wedges and sprinkle with remaining lime zest.
